New York Cheesecake

I wanna add more (cheese cake) vids (and review later) but start with this one - Tom's Test Kitchen - (there are soooooo many). Think this is a very good recipe. In contrast to many other recipe's he makes a flour/sugar crust instead of using Graham crackers. My preference is the baked cheesecake over the non-baked.  ((Here)) is the link for the ingredients.

Crust
3/4 cup of flour
3 tbls of sugar
1/2 tbsp of fresh lemon juice
6 tbls of unsalted butter
1 slightly beaten egg yoke
1/4 tsp of vanilla

Filling
3 8oz packages of cream cheese, softened
1 cup of sugar
1/2 tsp of fresh lemon juice
1/4 tsp of vanilla
2 tbls flour
1/4 tsp salt
2 eggs
1 egg yoke
1/4 cup of almond milk

Here is one I found on Vimeo. It is from Nola Kitchen in Tel Aviv. I like the idea of small portions. There is no recipe with it and I am not sure if it's beaten eggwhite she is using. Or..maybe sourcream? And the frosting, also sourcream? Dunno. Well, just have to watch again ;)

And I have to post a cheesecake of Stephanie Jaworski of Joy of Baking. One of the best pastry demonstration channels. She really takes time to explain everything and she is very precise in giving to measurements. That's nice (and very important with pastry).
